These cookies are just right - crispy on the bottom and soft inside. Better yet? The recipe takes no time to complete.
Coconut Macaroons
1c + 1/3 cup flaked coconut
1/3 cup sugar
2 tablespoons all-purpose flour
1/8 teaspoon salt
2 egg whites (separated from 2 whole eggs)
1/2 teaspoon vanilla extract
Drop by rounded teaspoonfuls onto greased baking sheets. Bake at 325° for 18-20 minutes or until golden brown. Cool on a wire rack.
Yields approximately 18 cookies.
