Mashed Cauliflower

When I was an executive at a movie studio, a lifetime ago, a good friend and colleague called me into her office.  "Taste this", she said. She had just started the South Beach diet and was enjoying the discovery of a whole new way of eating. I couldn't figure out what this yummy dish was - so much like mashed potatoes yet not quite. And this is why I love this brilliant recipe:  mashed cauliflower becomes a low carb substitute for mashed potatoes.  Top them with your favorite fish dish and you have an easy, delicious dinner.

Mashed Cauliflower
 
1 medium head of cauliflower, leaves and stems removed, larger florets broken apart
3 T cream or milk
1 T butter
salt and pepper to taste
 
In a steamer, steam cauliflower florets until tender, about 15 minutes.  If you do not have a steamer, add cauliflower florets to a large sauce pan and add water - enough to cover plus an extra inch.  Bring to a boil and simmer high until tender, about 15 minutes.
 
Drain cauliflower and let cool.
 
In a food processor, process cauliflower until smooth.  Add cream or milk and butter and pulse until incorporated.  Season to taste with salt and pepper.
