Chunky Basil Tuna Salad With Granny Smith Apples
1 - 7 ounce can of solid white albacore tuna packed in water, drained
1/3 c chopped celery
1/4 c chopped shallot
1/2 cup crisp green apple such as Granny Smith, cored and chopped
1 T fresh lemon juice
1/3 c reduced fat Vegenaise
4 large basil leaves or 8 small basil leaves, sliced into thin ribbons
In a bowl, add tuna and break apart with a fork. Add next 5 ingredients and combine. Add more Vegenaise if you prefer. Garnish with basil leaves.
Serves 3-4.
