Roasted Broccoli Rabe And Radicchio With Lemon Recipe

This is classic Mediterranean fare. A fresh, healthy salad or side dish bursting with flavor. And an added bonus: it's really easy to prepare. Broccoli rabe, radicchio, lemon and a little olive oil and seasoning is all it takes.  Roasted just long enough to allow the broccoli to become tender crisp and the bitter radicchio and tangy lemon to soften and mellow. Finished with crispy, smoky vegan bacon. Now I love broccoli and eat it several times a week, mixed in a chopped salad with a gazillion other vegetables.  But it's dishes like this that remind me that broccoli should take center stage more often.

Roasted Broccoli Rabe And Radicchio With Lemon

1 lb + 1/4 lb broccoli rabe, cut into 2" pieces
1 head radicchio, cored and cut into 1/2" thick slices
1 lemon, cut in half lengthwise and then sliced thinly widthwise
2 T olive oil
1/4 t salt
freshly ground black pepper
3 T - 4 T cooked, crumbled vegan bacon {recipe link: vegan bacon

Preheat oven to 400 degrees.

In a 12" by 17" roasting pan, toss the first 6 ingredients together. Roast until broccoli is tender and radicchio has wilted, about 10 minutes. Remove from oven and toss in crumbled bacon. Serve warm or at room temperature.

Serves 4-6.
