Garlic Green Beans With Manchego Cheese

Garlic lovers rejoice. This is one of my few go-to green bean recipes. A delicious, heavy dose of garlic is balanced with tangy lime juice, sweet white wine, and a dusting of my favorite nutty Spanish cheese. What's even better - this Southwestern - inspired dish takes less than 15 minutes to prepare. Below is the full recipe which is spot on every time. I just prepared a half recipe with great success. 

Garlic Green Beans With Manchego

2 T olive oil
2 lbs green beans, rinsed and ends trimmed
1/3 c minced garlic {save yourself some time and buy a jar of fresh minced garlic}
1/4 c dry white wine
1/4 c fresh lime juice
salt and pepper to taste
2/3 c shredded Manchego cheese

Pour olive oil into a 12" frying pan or 14" wok over medium-high heat. Add green beans and stir often until tender-crisp and lightly browned. Add garlic and stir fry for 1 minute. Add wine, lime juice, and salt and pepper to taste. Stir until liquid boils, 1 minute. Pour into a serving dish and sprinkle with Manchego.
