This is the second of three panini sandwiches for the day. The sweetness of seasonal apples paired with savory ingredients make this a great winter indulgence. I hope you enjoy as much as we did!
Apple and Gruyere Panini With Thyme
8 slices of bread {choose flour-less Ezekiel for a dose of sprouted whole grains}
4 T olive oil
approximately 2 crisp apples, cored and cut into thin wedges
8 oz Gruyere cheese
grilled onions
2 t fresh thyme leaves
pinch of salt and pepper
baby spinach
Note: Quantity of fruit will depend on the size of your bread slices.
Preheat your panini machine or two sided, indoor grill. Brush both sides of each slice of bread with olive oil and place 4 slices in the machine/grill until golden. Remove and repeat with remaining 4 slices of bread. Remove from heat and layer the cheese, apples, onion, thyme salt, pepper and spinach, evenly divided on 4 slices of bread. Close each sandwich with the remaining 4 slices of bread and grill for another few minutes, until cheese has melted. Remove and serve immediately.
