When Giada De Laurentiis sang the praises of Costco's steaks a few years ago, I decided to check out their seafood. What I found is that whether you hit the raw seafood bar, the fresh refrigerated fish or the frozen fish, you get very fresh selections for ridiculously low prices. So thanks to Costco, while a lobster cobb would typically be an occasional indulgence, it can now be something to enjoy as often as you like. This is my favorite seafood cobb recipe - it includes safe and healthy housemade vegan bacon and a delicious mustardy vinaigrette.
Lobster Cobb Salad With Vegan Bacon
2 ripe Hass avocados
1 + 1/2 lb cooked lobster, cut into small bite size pieces
1 pint cherry tomatoes, quartered
1 + 1/2 t kosher salt
1/4 t fresh ground black pepper
12 strips of housemade vegan bacon, crumbled {recipe here}
3/4 c crumbled Stilton blue cheese
1 large bunch of arugula
- and for the vinaigrette
1 + 1/2 T Dijon mustard
1/4 c lemon juice
5 T olive oil
1/4 t kosher salt
1/2 t fresh ground pepper
Whisk all the vinaigrette ingredients in a bowl and set aside.
In a large bowl, toss the arugula with 3 T vinaigrette. Divide the arugula among 4 plates.
Peel seed and chop the avocados.
In the same large bowl, add the lobster, tomatoes, avocado, bacon, salt and pepper and toss with desired amount of vinaigrette. Divide this mixture evenly among the 4 plates, on top of the arugula. Finish by sprinkling crumbled blue cheese on top of each salad.
