This is a salad for which I have a serious addiction. It's really simple yet really delicious. Be sure to find English mustard to create an amazing vinaigrette. And go for broccoli sprouts instead of alfalfa sprouts if you can - a single serving contains the nutrients of an entire head of broccoli. And last, Cotswold cheese trumps cheddar so please seek it out!

Chopped Butter Lettuce Salad With Avocado, Scallions and Basil

 4 scallions, chopped
1/2 cucumber, chopped
a handful of basil leaves, chopped
1 large Haas avocado or 2 small avocados, chopped
1 head live butter head lettuce, chopped
2 ounces of cheddar cheese, cubed (or Cotswold, which is cheddar cheese with chives)
a handful of alfalfa or broccoli sprouts
- for the dressing
6 T olive oil
2 T red wine vinegar
1 t English mustard (such as Colman's)
salt and pepper

Make the dressing
In a small bowl, combine red wine vinegar, mustard and a pinch of salt and pepper.  Slowly which in olive oil until emulsified. Taste and adjust seasoning.

Prepare the salad
In a large bowl, toss the first 6 salad ingredients with the dressing.  Divide the salad among 4 plates. Garnish each salad with sprouts.
